Tato diplomová práce se zabývá octy, jejich popisem a chemickým složením. Zaměřuje se na polyfenolické složení octů, jejich antioxidační aktivitu a na změny v průběhu technologického procesu. V závěru rešeršní části je popsána separace polyfenolů v octech pomocí vysokoúčinné kapalinové chromatografie. Experimentální část práce je věnována analýze polyfenolických antioxidantů v octech pomocí kapalinové chromatografie s využitím gradientové eluce. Následně pomocí nejlepších nalezených podmínek byly kvantifikovány tři fenolické kyseliny ve vzorku rýžového, jablečného a balzamikového octa.This thesis deals with vinegars, their description and chemical composition.
