Thesis (Master's)--University of Washington, 2017-08Background: A dietary pattern that includes whole grains is widely believed to provide numerous health benefits, such as a reduction in chronic disease risk factors like inflammation, insulin resistance, and subclinical markers of cardiovascular disease. A paper in 2007 by Lutsey et al. looked at the relationship between whole grains and CVD biomarkers. The results of this study found an inverse association between whole grain intake and diabetes risk but were unable to find significant results with CVD biomarkers.
