Report Introduction: This report deals with use patterns of fluid and dry milk products in selected eastern and midwestern institutions. The research was conducted by the Economic Research Service, U.S. Department of Agriculture, in cooperation with the Agricultural Economics Department, College of Agriculture, University of Wisconsin. The information presented here represents one phase of a broader study of a new dairy product--sterilized milk concentrate. No previous information was available on current milk consumption patterns (type, quantity, method of use) in institutions, so benchmark data were collected from a sample of selected types of institutions.
