La consommation de légumes riches en micronutriments est indispensable pour réduire l’incidence des carences nutritionnelles. La présente étude est une contribution à la promotion et à la valorisation d’une plante alimentaire et médicinale (Ficus sur) de la région septentrionale du Togo, dans l’intérêt de la sécurité alimentaire. Des analyses ont été menées suivant les méthodes usuelles de l’AOAC pour déterminer la composition nutritionnelle. Les profils d’acides gras, de terpénoïdes et de caroténoïdes ont été déterminés par l’analyse HPLC-ESI+-QTOF-HRMS.
