Análise microbiológica dos alimentos envolvidos em surtos de doenças transmitidas por alimentos (DTA) ocorridos no estado do Rio Grande do Sul, Brasil

The foodborne diseases are a great public health problem, both in Brazil and in other countries, being responsible for high economic and social costs. This paper analyzed the characteristics of the foodborne disease outbreaks investigated in the State of Rio Grande do Sul, in the years 2006 and 2007, mainly focusing on the microbiological analysis of the foods involved in the outbreaks. The analytical methods adopted followed the Compendium of methods for the microbiological examination of foods - APHA. One hundred and eighty-six outbreaks were investigated, of which 104 (56%) had samples contaminated with the microorganisms studied. Considering the samples with contaminations higher than 1,0 x 103 CFU/g or MPN/g (or presence/25g, in the case of Salmonella spp.), the main microorganisms identified were Salmonella spp. (37%), Positive coagulase staphylococci (28%) and Escherichia coli (22%). Bacillus cereus and Sulfite reducing clostridia were also identified, but with less frequency. The main foods involved in the outbreaks investigated were meat products (36%), prepared meals (20%) and salads (15%). Private homes were the principal place of occurrence of the outbreaks (43%), followed by commercial food establishments (18%) and industrial restaurants (14%). The results of this study demonstrate the necessity of guiding and educating the population concerning the care needed in the storage, handling and consumption of food, the good manufacturing practices and the risks associated with the contaminated foods.As doenças transmitidas por alimentos (DTA) constituem um grande problema de saúde pública, tanto no Brasil como nos demais países, sendo responsáveis por elevados custos econômicos e sociais. O presente trabalho analisa as características dos surtos de doenças transmitidas por alimentos investigados no Estado do Rio Grande do Sul, nos anos de 2006 e 2007, enfocando principalmente a análise microbiológica dos alimentos envolvidos nesses surtos. As metodologias de análise adotadas seguiram o Compendium of methods for the microbiological examination of foods, 4 ed. Foram investigados 186 surtos, dos quais 104 (56%) apresentaram amostras contaminadas com os microorganismos pesquisados. Considerando as amostras com contaminações maiores que 1,0 x 103 UFC/g ou NMP/g (ou presença/25g, no caso de Salmonella spp.), os principais microorganismos identificados foram Salmonella spp. (37%), Estafilococos coagulase positiva (28%) e Escherichia coli (22%). Bacillus cereus e Clostrídios sulfito redutores a 46 ºC também foram identificados, com menor freqüência. Os principais alimentos envolvidos nos surtos investigados foram os produtos cárneos (36%), os pratos preparados (20%) e as saladas (15%). As residências foram o principal local de ocorrência dos surtos (43%), seguidas de estabelecimentos comerciais (18%) e refeitórios de empresas (14%). Os resultados obtidos neste trabalho demonstram a necessidade de orientar e educar a população quanto aos cuidados necessários na conservação, manipulação e consumo dos alimentos, às boas práticas de higiene e aos riscos associados aos alimentos contaminados
