One of the main compounds in wine are polyphenols, the metabolites driven from plants (grapes, fruit and berries) and can be used in specific areas, including food making, pharmaceutical, and cosmetic industries. Polyphenols are widespread not only in the grapes, but also in seeds and stems. The tannin, flavonoid, and phenolic content in wines changes based on maceration duration throughout the winemaking process. The aim of this bachelor thesis was to perform extraction of polyphenols from several fruit wines using different solid-phase extraction cartridges.
