Since a few years, physicists try to understand how a fluid such as water or air transports sand grains and how a structure like a sand dune can be formed by the retroaction between the fluid flow and the deformation of the fluid-granular interface. In this Thesis manuscript, we present laboratory experiments which consist in reproducing familiar structures such as beach ripples. These patterns are formed by water waves on the beach shore. We examine the initial wavelength selection as well as the coalescence process of the so-called rolling-grain ripples before their transition to the so-called vortex ripples which correspond to the saturated state of the interface.
