In this manuscript, we illustrate the concepts of capillarity and metastability with examples mostly involving helium or water. The study of metastable liquids can bring original information about their structure. In the case of water, we have measured how far the liquid could be brought away from equilibrium with the vapor: we have thus explored the region of negative pressures, where the liquid is put under mechanical tension at reduced density. Our results point out a new anomaly of water in this region. In helium, we have explored another kind of metastability, this time by applying pressure above freezing: the liquid becomes denser and metastable compared to the solid.
