Wine professionals are interested in global methods to follow grape maturation in order to determine grape quality at harvest. Such methods could provide useful for the elaboration of quality wines. In such context, the main objective of this work was to investigate novel sensory and instrumental methods to follow overall maturation of Cabernet franc grapes. VisNIR spectroscopy and sensory analysis of grapes appeared the most promising methods of the wine industry to follow maturation. Nevertheless, two-phase compression of berries at 20 % rate was not an appropriate method for the determination of textural maturity.
