This thesis work deals with the possibilities of using two techniques of headspace - mass spectrometry (DHS-MS and SPME-MS) to the characterization of the origin and the quality of cork wine stoppers by the analysis of their volatile and semi-volatile fraction. The preliminary stages necessary for the implementation of DHS-MS and SPME-MS allowed the determination of the parameters of the analysis according to the following criteria : simplicity, speed of the analysis compared with classical techniques (GC-MS and sensory analysis) and the stability of the system as evaluated by the coefficient of variation and an analyse of variance.
