High-throughput generation of nanoliter-sized droplets in microfluidic channels enables simultaneous monitoring of hundreds of reactions. Encapsulation of a single cell in these droplets opens the way to a better understanding of the heterogeneity present in biological organisms. This thesis first describes the development of a novel microfluidic technology dedicated to a high-throughput gene expression measurement of individual cells isolated in droplets and aims at refining the method of reverse transcription followed by a real-time polymerase chain reaction. In the second part, the droplet technology is used to study mass transfers between the dispersed and the continuous phase, illustrated by two applications of liquid-liquid extraction...
