Light interactions with biological tissues have been exploited in an increasing number of techniques for characterization. Among these techniques, uorescence polarization measurement offers a selective way for characterizing the organization of biological tissues. The aim of this work was to build a methodology for investigating the uorescence polarization of muscle tissues in order to obtain information on their structural organization and its modi cations caused by processing. A review presents the principle of uorescence anisotropy and the structure and optical properties of muscle tissues.
