Falling film evaporators (FFE) are widely used in the chemical, refrigeration, petroleum refining, desalination and food industries. In the dairy industry FFE is applied for the concentration of solutions prior to the drying step. Despite the economic importance of the vacuum evaporation process in the manufacture of dairy dried products, the knowledge about the process is mostly empirical. Research aiming to improve the efficiency of the process is therefore necessary.
