Some microorganisms are capable of transforming isoflavones, ellagitannins, and lignans into equol, urolithins, and enterolignans, respectively. These compounds are more bioavailable, they have more estrogenic/antiestrogenic and antioxidant activity than their precursors, and they are associated with beneficial effects for human health.
