This bachelor thesis is dedicated to lesser cultivated fruit species (Crataegus laevigata (Poir. in Lam.) DC, Crataegus pinnatifida Bunge, Cydonia oblonga Mill., Mespilus germanica L. a Sorbus domestica L.), their specification from a taxonomic and morphological point of view, and deals with options of growing these species on area of Czech Republic. It also describes some possibilities of processing the fruit (processing of medlar was only described theoretically) and compares the success of each product in sensory evaluation. It was proven that these species are suitable for industrial and home utilization. They should serve as an enlargement of a market assortment
