Spray drying is one of the most preferred methods of converting food and pharmaceutical solutions into powder form. Very high product throughput, hygienic and highly automated process and relatively benign thermal and dehydration stress on products associated with this process has made it ubiquitous in powder manufacture. Compared to freeze drying, spray drying is significantly less expensive both in terms of operation and capital costs.
