Kombucha çayı, şekerli siyah çayın, simbiyotik bakteri kültürü ve mayalar ile fermente edilmesi sonucu üretilen bir içecektir. Bu çalışmada, substrat olarak tatlandırılmış siyah çay ve yeşil çay birlikte kullanılmış, toplam asitlik 0,28 g/100 mL‟ye ulaĢana kadar 22±2 C‟de kombucha fermantasyonu gerçekleştirilmiştir. Fermantasyon sırasında pH azalırken, toplam asitlik artmıştır (p<0,05).
