Bu çalışmada Türkiye'nin güney sahillerinde doğal olarak yetişen dikenli incir meyvelerinin, geleneksel ürünlerimizden pestil ve fıstıklı sucuğa işlenmesi yoluyla besleyici ve fonksiyonel özelliği yüksek yeni ürünlerin gıda sanayine kazandırılması amaçlanmıştır. Üç farklı bölgeden toplanan dikenli incirlerin ürüne işlenmesinde farklı kurutma metodları (fırın tipi kurutucu ve endüstriyel tip kurutucu) denenmiş, böylece hijyenik ve güvenilir koşullarda üretim için en uygun yöntem araştırılmıştır. Dikenli incir meyvelerinin ve ürünlerinin fizikokimyasal ve fonksiyonel özellikleri analiz edilmiş ve sonuçlar istatistiksel olarak değerlendirilmiştir.
