Pectic substances is a group designation for those complex colloidal carbohydrate derivatives which occur in, or are prepared from, plants and contain a large pro- portion of galacturonic acid residues existing in chain like combination. The carboxyl groups of the polygalacturonic acids may be partially esterified by methyl groups and partly or completely neutralised by one or more bases
