Ensuring food safety is a relevant issue that leads to providing innovative alternatives that naturally extend product shelf life and ensure product safety. This work proposes the development of an edible coating from chitosan added with antimicrobial biocomposites such as encapsulated oregano essential oil (OEA) and nisin. These compounds present active principles recognized by their antimicrobial activity and are considered safe and natural products to be applied in food.
