Se estudió la estabilidad térmica de la lactoalbúmina bovina en presencia de diferentes concentraciones de eritritol, xilitol, sorbitol, inositol y glucosa y algunas características del proceso de adsorción de la proteína en la interfase aire-agua en la presencia de los cosolutos seleccionados. Los perfiles de desnaturalización de la apo-, holo-α-lactoalbúmina y holo-α-lactoalbumina en presencia de CaCl2 con los cosolutos seleccionados, se obtuvieron a través de DC en el UV cercano y lejano, fluorescencia, absorción UV-VIS y DSC.
