Las aflatoxina B1 (AFB1) es un metabolito secundario producido por algunas cepas de Aspergillus flavus y Aspergillus parasiticus que crecen sobre diferentes tipos de granos utilizados en alimentación de animales de granja. Al momento de ser ingeridas estas toxinas son metabolizadas por un tipo de enzimas llamadas citocromo P450 (CYP450), una familia de enzimas relacionadas con la biotransformación de productos endógenos y xenobióticos. El producto de biotransformación es una molécula altamente reactiva conocida como AFB1-8,9-epóxido (AFBO).
