Total lipid, cholesterol, and fatty acids were determined in freshwater prawn (Macrobrachium rosenbergii) and in wild marine shrimp (Penaeus brasiliensis, Penaeus schimitti, Xiphopenaeus kroyeri). The concentration of total lipid was 0.9–1.0 g/100 g in the marine species and 1.1 g/100 g in freshwater M. rosenbergii. No significant difference was observed in terms of origin of samples and size. Cholesterol levels ranged from 114 in Penaeus brasiliensis to 139 mg/100 g in M. rosenbergii. Size had a significant influence in P. brasiliensis but not in P. schimitti.
