Como parte de un proyecto con la empresa Danper Perú, se evaluó el contenido de compuestos fenólicos y la actividad antioxidante de diversos extractos de alcachofa (Cynara scolymus L.), cultivada en el norte del Perú (provincia de La Libertad). El contenido de compuestos fenólicos expresados como mg de ácido gálico varía entre 93 y 117 mg por gramo de muestra, dependiendo del tipo de extracto analizado y de la forma de ser procesado.
