Production of high amylose from sago can be considered as a high potential innovative approach of producing healthy food. High amylose starch can be produced by amylopectin debranching process. There are five parameters that could affect the debrancing process during the production of the high amylose starch. The purpose of this study was to identify the optimal range of these five parameters the efficient way by applying response surface methodology (RSM).
