Lungo la fascia pedemontana delle province emiliane esiste una zona in cui, per le particolari condizioni climatiche, è possibile far crescere e sviluppare l’olivo. La presenza di un’antica olivicoltura in Emilia è testimoniata, non solo da ritrovamenti archeologici e da testimonianze storiche, ma anche da un numero sorprendentemente alto di piante secolari, localizzate in zone particolari, adatte alla crescita e allo sviluppo di questa pianta. In queste zone, prevalentemente ambienti collinari, si sono differenziate, nel tempo, diverse varietà di olivo che hanno costituito un germoplasma ricco e diversificato.
