The task of the presented PhD. thesis was to evaluate the condition and the process of abattoir chicken quality and chicken meat since 1998 till the present. I worked on this in the following thematic domains: purchase of the abattoir chicken and their quality; health condition of the purchased chicken; postmortal changes in the muscles of dead chicken; influence of the technology on the quality of butchered chicken; structure of the chicken meat influenced by sex and age of chicken.Available from STL Prague, CZ / NTK - National Technical LibrarySIGLECZCzech Republi
