The purpose of the RAPSODIE project presented in this paper was to extract from standard plant oil varieties esters with a high oleic acid content and no more than trace concentrations of polyunsaturated components by means of selective hydrogenation. This meant finding a compromise between the two conflicting goals of resistance to ageing and good low-temperature behaviour. A look at methods of plant oil hardening that have been in use for decades illustrates the situation at hand. Use of very active catalysts leads to largely saturated products which however remain solid even at temperatures beyond 10 C.
