Deux protocoles de dosage d'activité de la lactoperoxydase (LPO) et de la g-glutamyl transpeptidase (g-GT) dans le lait ont été mis au point. Ils comprennent une étape de transparisation permettant une lecture spectrophotomètriques directe d'où un gain de temps appréciable. Des laits chauffés entre 50 et 80C ont montré que la LPO et la g-GT ont une thermo-sensibilité permettant leur utilisation pour l'appréciation de l'efficacité ou de la sévérité de la pasteurisation. Les résultats obtenus avec ces protocoles sur différents laits sont bien corrélés (R2 >= 0,97) avec ceux obtenus avec des protocoles de référence.
