La maturation de la baie implique de nombreux changements affectant le métabolisme et la compartimentation des acides organiques et des sucres, l'équilibre hydrique, la composition de la paroi cellulaire et en métabolites secondaires. Pour mieux comprendre les mécanismes du développement de la baie à l'échelle du génome, nous avons participé, en collaboration avec les laboratoires INRA UMR 619 de Bordeaux et UMR SPO Agro-Montpellier, au séquençage de plus de 15 000 EST.
