The aim of this study was both to describe quantitatively and qualitatively the porcine intermuscular fat and to estimate the suitability of MRI to predict muscle total fat and more particularly intermuscular fat proportions in half carcasses and cuts. 35 pigs from 4 different genotypes exhibiting a large variability in fatness were slaughtered at 115 kg live weight. After the cut in four joints : ham, shoulder, lin and belly the joints from the 35 half-carcasses were dissected and some adipose tissue samples were taken in order to measure the total lipids content an the fatty acid composition.
