Les carcasses de volaille sont fortement chargées en bactéries pathogènes. Deux techniques de décontamination, thermique (vapeur d'eau) et chimique (solution d'acide lactique) ont été étudiées, seules ou en combinaison, sur des surfaces de peau de poulet inoculées avec Listeria innocus et Salmonella enteritidis.
