Maso a masné výrobky vždy patřily co do vlivu na lidské zdraví k velmi diskutovaným potravinám. V roce 2016 zařadil IARC masné výrobky do kategorie 1, tedy pro člověka karcinogenní látky a červené maso do kategorie 2A, tedy pro člověka pravděpodobně karcinogenní látky. V dnešní době se setkáváme s mnoha druhy výrobků, jejichž kvalita se velmi liší, tudíž výběr vhodného výrobku vyžaduje aktivní účast spotřebitele. Cílem teoretické části této bakalářské práce bylo provést rešerši o nutričním složení masa a masných výrobků a vlivu konzumace masa a masných výrobků na lidské zdraví, zejména ve spojitosti s klasifikací IARC, a uvést je do souvislosti s výživovými doporučeními.
