The frozen food can endure from the rise of their temperature essentially during their transfer on a loading or unloading platform for exemple, where the ambient temperature is warmer than the products one. The aim of this study is to model heat transfer within the frozen food, packaged into pallets and placed in a positive temperature ambience. The numerical resolution of the energy equation is performed on a three-dimensional configuration by the finite-volume method with the PHOENICS computer program. The model can predict the evolution of temperature versus time. It takes into account the nature of packaging and the external conditions : temperature and velocity of the ambient air.
