Bu tez kapsamında berrak elma suyunun ısıl olmayan yöntemlerle pastörizasyonu amacıyla yüksek yoğunluklu vurgulu ışık, düşük voltajlı elektriksel işlem, esansiyel yağ nanoemülsiyonu ilavesi ve bunların kombine etkilerinin meyve sularında önemli bir problem olan Alicyclobacillus acidoterrestris inaktivasyonu ve elma suyu kalite özellikleri üzerine etkileri incelenmiştir. Çalışmanın ilk aşamasında A. acidoterrestris üzerine antimikrobiyal etkisi olan esansiyel yağlar seçilmiş, bu esansiyel yağlar ve farklı emülgatörler kullanılarak nanoemülsiyonlar oluşturulmuş ve karakterize edilmiştir.
