Various analytical methods are used for the determination and quantification of triglycerides in milk fat. This paper reviews the latest developments analyzing triacylglycerols in milk fat with an emphasis on the use of chromatographic methods. moreover the different approaches for the detection of adulteration of milk fat will be compared. The period from 1990 to 1994is covered and references regarding the work done until 1989 are given.JRC.(EI)-Environment Institut
