ON THE COMPOSITION OF THE FUKUOKA CITY MARKET MILK. (III). : (THE SEASONAL VARIATIONS OF THE SPECIFIC GRAVITY, THE PERCENTAGES OF TOTAL PROTEINS AND CASEIN ; AND THE RELATIONS OF SOLIDS TO PROTEINS AND. TO CASEIN, AND FAT TO PROTEINS AND TO CASEIN IN MILK)

1. The author had previously reported on the seasonal variations of the percentages of total solids, solids-not-fat and ash, and the relations of total solids to fat and to ash, in milk from the Fukuoka city market. This paper reports the results obtained in studying (I) the seasonal variations of the specific gravity, the percentages of total proteins and casein, and (II) the relations of solids to proteins and to casein, and fat to proteins and to casein in 3 samples of the morning\u27s whole milk (pasteurized) from the Fukuoka city market taken over a period of one year from March, 1936 to February, 1937. 2. The record of seasonal variations of the specific gr a v ity for each month in 3 samples of the milk shows that the highest average specific\u27 gravity of 2 samples of the milk (No. i and No. 2) was found in May, but that of the other sample (No. 3) in April, and the lowest values were found in December, September and January for the samples No. i, No. 2 and No. 3 respectively. All samples reached a maximum point in the spring, but 2 samples of the milk (No. i and No. 2) reached a minimum in the autumn and the other sample (No. 3) in the winter. 3. The record of seasonal variations of the percentage of total proteins for each month, in 3 samples of the milk, shows that the highest average percentages of proteins are found in January or February, December and November for samples No. 1, No 2 and No. 3 respectively, and the lowest values in August (No. 1 and No. 3) and July (No. 2). The average percentage of proteins of 2 samples of the milk (No. 1 and No. 2) is highest in the winter (sample No. 3 reaching a maximum point in the autumn); and all samples reached a minimum in the summer. 4. The record of seasonal variations of the percentage of casein for each month in ,3 samples of the milk shows that the highest average percentages of casein are found in February, December and November or December for samples No. 1, No. 2 and No. 3 respectively, and the lowest values in June (No. 1), May (No. 2) and June or August (No. 3). The percentage of casein of all samp l es of the milk reached a maximum in the winter, while the minimum percentages appared in the spring (No. 1 and No. 2) and the summer (No. 3). 5. Regarding the relatio n of total solids to proteins in 3 samples of the milk, the record shows that the amount of proteins in the solids is fairly constant, varying from 26. 3 to 26. 6 percent. These results are slightly higher than those found by LYTHGOE. The relation of total solids to casein in 3 samples of the milk shows that the amount of casein in the solids is fairly constant, varying from 19. 6 to 19. 9 percent. 6. The ratio of fat to proteins in 3 samples of the milk is very uniform throughout the year, and the ratio ranged from a maximum of O.99 (No. 1 and No. 3) to a minimum of 0.89 (No. 2). 7. The ratio of fat to casein in 3 samples of the milk is very uniform through the year, and the ratio ranged from a maximum of o. 75 (No. 3) to a minimum of 0.67 (No. 2).1. 前回の調査の後をうけて昭和11年3月より昭和12年2月に亙る1ヶ年間に於ける福岡市々乳(1合壜詰滅菌全乳)(朝乳)3種の比重, 全蛋白質及びカゼイン百分率を楡定し, これ等3成分の(1)季節的變化, (II)固形物と全蛋白質及びカゼインとの關係, (III)脂肪と全蛋白質及びカゼインとの關係に就いて檢討せんとするのである。2. 1ヶ年間を通じ月別に見たる福岡市々乳の比重は市乳2種(第1號乳及び第2號乳)は5月, 他の1種(第3號乳)は4月に於て最高を示したのであるが最低は第1號乳は12月, 第2號乳は9月, 第3號乳は1月に於てこれを示した。而して今これを奉, 夏, 秋, 冬の四季に分ちて見るときは市乳3種共に春期に於て最高を示したが最低は市乳2種(第1號乳及び第2號乳)は秋期に他の1種(第3號乳)は冬期に於てこれを示したのである。3. 全蛋白質百分率は第1號乳は1月又は2月, 第2號乳は12月, 箪3號乳は11月に於て何れも最高を示し最低は市乳2種(第1號乳蓼び第3號乳)は8月に他の1種(第2號乳)は7月に於てこれを示した。伺これを四季別に槍するに市乳2種(第1號乳及び第2號乳)は冬期に他の1種(第3號乳)は秋期に於て最高を示したが最低は市乳3種共に夏期に於てこれを示したのである。4. カゼイン百分率は第1號乳は2月, 第2號乳は12月, 第3號乳は11月又は12月に於て最高を示したが最低は第1號乳は6月, 第2號乳は5月, 第3號乳は6月又は8月に於てこれを示した, 伺これを四季別に見るときは市乳3種共に冬期に於て最高となり最低は市乳2種(第1號乳及び第2號乳)は春期に於て他の1種(第3號乳)は夏期に於てこれを示した。5. 固形物と全蛋白質との關係, 即ち牛乳固形物100分中の全蛋白質量は1ヶ年の總平均に於て26.3～26.6%を示し LVTHGOE の示した約25%の値に比較して稍高きを示して居る。尚牛乳固形物100分中のカゼイン量は1ヶ年の總平均に於て19.6%～19.1%を示し市乳3種共に相近似した値を示すのである。6. 脂肪對全蛋白質の比は市乳3種共にその季節に由る變化勘なく0.99(第1號乳及び第3號乳)を最高とし0.89(第2號乳)を最低とする。7. 脂肪對カゼインの比は市乳3種共にその季節的變化僅少で0.75(第3號乳)を最高とし0.67(第2號乳)を最低とする
