Throughout evolution, plants have been developing defence systems against different abiotic and biotic aggressions by their environment. These defensive systems include both constitutive and inducible defences. In response to stress signals, plants synthesize defence proteins and different chemical compounds. These compounds can carry out direct defensive functions, that is, acting like antioxidants, antibacterial or antifungal. Phenolic compounds and alkaloids, as well as some volatile organic compounds (VOCs) with less polarity and molecular weight, belong to this defensive compounds group.
