This paper presents the mathematical modeling of the moisture diffusion of the Piper Nigrum L. berries. Discussion on the diffusion of piperine (one of the main chemical constituent of Piper Nigrum L. berries) which occurs during drying process is also included in this paper. Mathematical model proposed in the studies is based on the Fick's second law, particularly the diffusion equation of a sphere in radial direction. The numerical solution was established using the finite difference scheme based on methodology proposed by Patil. Some modifications were done to the original scheme to suit Piper Nigrum L. berries drying. The numerical solution proposed is able to provide a generally showed good agreement with experimental results
