Henkilöstöravintolan energiantehostamismahdollisuudet

The target of this thesis is to research the energy balance for the target kitchen and to research the energy efficiency opportunities in commercial kitchens. The energy balance was used to establish new ways to control the ventilation in more energy efficient way. The data for the thesis was collected from different planning guides and equipment manufacturers. The thesis took into account the kitchen processes and their effect on the energy balance of the kitchen. The commercial kitchens are very common in our everyday life and it has only been possible to assess their energy consumption. Kitchens are very significant energy users of a building's total consumption. That is why the energy efficiency and the economic life should be paid attention to. The kitchen processes make up a significant part of the kitchen operations and those should be noticed in the planning of energy efficient kitchen. Usually this is very difficult because the kitchens are built in spaces where kitchens are not originally designed to be. The focus of surveys of the indoor climate of commercial kitchens has been the indoor temperature although redundant ventilation also occurs. This thesis provides an energy balance for the target kitchen and new calculation methods to demand controlled ventilation in kitchens. Also a metering system was created to meter the electric consumption of the kitchen. It also allows monitoring of the consumption and allows energy efficiency rating for commercial kitchens.Diplomityön tavoitteena oli selvittää kohdekeittiönä toimivan keittiön energiatase ja tutkia ammattikeittiöiden energiantehostamismahdollisuuksia. Energiataseen avulla pyrittiin luomaan uusia ohjausmalleja, joilla saavutetaan energiansäästöä keittiön ilmanvaihdossa. Tietoa kerättiin eri suunnitteluohjeista sekä eri laitevalmistajilta. Tutkimuksessa otettiin tarkasti huomioon myös keittiöprosessit ja niiden tuoma vaikutus keittiön energiataseeseen. Henkilöstöravintolat ja ammattikeittiöt ovat todella yleisiä keskuudessamme ja niiden energian kulutusta on ainoastaan pystytty arvioimaan. Ammattikeittiöt ovat kuitenkin merkittäviä energiankuluttajia kiinteistössä, jonka vuoksi niiden energiatehokkuuteen ja elinkaaritalouteen on syytä kiinnittää huomiota. Keittiöprosessit on merkittävä osa keittiön toimintaa, ja energiatehokkaan keittiön suunnittelussa on ehdottomasti huomioitava keittiöprosessit. Usein tämä on kuitenkin haasteellista, jos keittiö rakennetaan tilaan, jota ei alun perin suunnitteluvaiheessa ollut tarkoitettu keittiöksi. Ammattikeittiöiden sisäilmastoon suuntautuvissa tutkimuksissa keskitytään yleensä liian korkeaan sisäilman lämpötilaan, vaikka myös ylimääräistä ilmanvaihtoa esiintyy. Työssä luotiin laskentamalleja ilmanvaihdon tarpeenmukaiselle ohjaukselle. Työssä onnistuttiin luomaan keittiölle energiatase ja tämän avulla laskentamalli ilmanvaihdon tarpeenmukaiselle ohjaukselle. Henkilöstöravintoloille myös kehitettiin mittarointijärjestelmä, jonka avulla seuranta ja mahdollinen keittiöiden energialuokitus mahdollistuu
