Key service features for supporting grocery store customers to follow personalized nutrition recommendations

The prevalence of chronic diseases is increasing in the world. The current healthcare systems struggle in supporting the amount patients of chronic diseases. Therefore, we need a change towards more preventive and more individual management of health and well-being. Fortunately, most of the chronic diseases can be prevented. The current challenge is that the healthcare cannot alone support individuals to live healthier lives, thereby preventing chronic diseases. This dilemma calls for new services to support long-term health choices in the lives of people. One service opportunity that could influence in better heath of societies is with grocery shopping. There is evidence that show the power of grocery stores in influencing in consumers’ purchase decisions. This thesis aims to investigate the possibilities of grocery store services to offer support in healthier purchase decisions, and hence to have an impact towards better nation-wide health. This could possibly have a remarkable effect in decreasing the prevalence of chronic diseases. This thesis aims to identify the most important service features that will support people in following nutrition recommendations and maintain a healthier, more varied diet. This thesis uses a mixed methodology research approach including both qualitative and quantitative data. The qualitative data was gathered through semi-structured interviews and the quantitative data through an online survey. The quantitative data analysis is based on an expectation-confirmation model (ECM) and it has been analysed using structural equation modelling (SEM). The results of this research show that transitioning towards a healthier diet could be supported by integrating the nutrition recommendations, diet restrictions, etc. in already existing grocery store services. The features that are found most useful among the consumers were discounts and coupons, recipe search and follow-up, and these would be the best features to integrate to existing services to ensure the customer satisfaction and that the features are taken into regular use. In addition, the research showed that the current systems do not currently support healthier, more varied diet. This research showed that customer satisfaction would lead to long-term use of the grocery store applications. Customer satisfaction, on the other hand, will be gained through saving time in grocery shopping and designing the applications in a manner that will support the brick-and-mortar shopping better.Kroonisten sairauksien määrä kasvaa maailmassa, eikä terveydenhuoltomme selviä tämän kasvavan pitkäaikaissairauksien määrän kanssa pitkällä aikavälillä. Tämän vuoksi tarvitsemme ennaltaehkäisevää sekä yksilökeskeisempää terveyden edistämistä. Onneksi suurin osa kroonisista sairauksista on ehkäistävissä. Tämänhetkinen haaste kuitenkin on, ettei terveydenhuolto pysty yksin tukemaan yksilöitä elämään terveellisempää, ennaltaehkäisevämpää elämää. Tästä syystä tarvitaan palveluita, jotka tukevat pitkäaikaisia muutoksia terveellisempää elämää kohti. Ruokatavarakaupoilla on mahdollisuus vaikuttaa koko yhteiskunnan tasolla terveellisempiin valintoihin. Tämän tutkielman tavoitteena on tutkia ruokatavarakauppojen palveluiden mahdollisuuksia tukea terveellisempiä ostopäätöksiä. Tällä voisi olla mahdollisesti merkittäviä vaikutuksia kroonisten sairauksien vähentämisessä sekä kansanterveyden parantamisessa. Tutkielman tarkoituksena on löytää tärkeimmät tekijät, jotka tukisivat kuluttajia terveyssuositusten sekä monipuolisen ruokavalion noudattamisessa. Tämä tutkielma toteutettiin monimenetelmätutkimuksena. Tutkimuksen laadullinen data kerättiin puolistrukturoiduilla teemahaastatteluilla. Määrällinen data puolestaan kerättiin verkkokyselyllä. Määrällisen tutkimuksen pohjana käytettiin ”odotusvahvistus”- mallia (ECM-malli) ja data analysointiin käyttäen rakenneyhtälömallia (SEM). Tutkielman tulokset osoittavat, että terveyssuositusten noudattamista voitaisiin tukea integroimalla terveyssuositukset sekä rajoitteet ruokakauppojen jo olemassa oleviin palveluihin. Ominaisuudet, jotka asiakkaat ovat kokeneet arvokkaimmiksi (alennukset ja kupongit, reseptien haku sekä seuranta) olisivat parhaita tapoja integroida kyseiset suositukset ja taata paras asiakastyytyväisyys sekä säännöllinen palveluiden käyttö. Lisäksi tutkielma osoitti, että nykyiset palvelut eivät tue kuluttajia kohti terveellisempää tai monipuolisempaa ruokavaliota. Tutkimustulosten mukaan asiakastyytyväisyys sen sijaan johti ruokakauppojen sovellusten pitkäaikaiseen käyttöön. Asiakastyytyväisyys puolestaan saavutetaan asiakkaiden ruokaostoksiin käytettävän ajan vähentämisellä sekä suunnittelemalla sovellukset niin, että ne tukevat paremmin kivijalkakaupassa asiointia
