Bu araştırma, Alabalık (Oncorhynchus mykiss) 'in iç organlarından elde edilecek olan proteinaz tripsin enziminin geri kazanılması ve çıkarılması, karakterize etmeyi ve bir takım fonksiyonel özelliklerinin belirlenmesini amaçlamıştır. Ekstre edilen tripsin aktivitesi için optimum sıcaklık 45 °C olarak belirlenmiştir. Enzim (20–60 °C) sıcaklık aralıklarında aktif olmuştur, ve 60 °C'de başlangıç aktivitesinin %85–90 'ı korunmuştur. 80 °C'de enzim aktivitesinin %85 'ini kaybetmiştir. Alabalık tripsinin optimal pH değeri 8 olarak belirlenmişitr, başlangıç etkinliğinin %90 'ı korunmuştur.
