The article attempts to define the criteria that Polish consumers consider when buying organic food. Directing consumption towards the purchase of organic food a reflection of an increasing level of environmental and food security education. The analysis is based on primary data obtained from studies conducted in Poland in 2015. The sample constituted 3436 respondents. The statistical studies were conducted using the Statistica 10.1 PL program. The analysis showed that a Polish consumer of organic food is aware of the benefits offered by the consumption of products free from chemical impurities. Organic food is usually found at markets or small stores specializing in such types of food. Consumers paid special attention to product labeling. ...
