The challenge of scale up and scale out agroecological actions and initiatives inherently implies, the democratization, among others, of the consumption of agroecological (organic) food. The objectives of this work point, on the one hand, to establish variables, both from the perspective of farmers as well as from consumers (from the Maipo Valley in Chile) focused on the definition of “agro-ecological peasant product” from which to define concrete actions regarding the organizational strengthening of farmers and the access of such products to the interested population.
