ANALISIS BORAKS PADA ABU KOPRA DI KABUPATEN MINAHASA DAN MINAHASA SELATAN

ABSTRACTBorax is one of the dangerous substances and is prohibited from being used in food products. Borax is chemical compound called sodium tetraborate (NaB4O7 â»10 H2O). Borax or Borax acid is usually used for making detergents and antiseptic and its use in food product, can cause a various health problems. The purpose of this study was to determine the presence and levels of Borax found in copra ash in Tateli and Lelema villages. The method which used in this study was the flame Color Test method, Tumeric Paper and UV-Vis Spectrophotometer. The results obtained that the two samples identified based on color visualization parameters. Quantitative analysis by UV-Vis spectrophotometer resulted in the value of Borax levels for each sample which calculated using the regression formula of y = 0,137x + 0,136 and the value of R2 = 0,999. Sample A is 1.131 μg/mL and B sebesar 0,277 μg/mL. The grade value indicates the presence of Borax in samples A and B. Keywords : Borax, Copra Ashes, Color Test, UV-Vis Spectrophotometry ABSTRAKBoraks termasuk salah satu zat berbahaya dan dilarang digunakan pada produk pangan. Boraks merupakan senyawa kimia dengan nama natrium tetraborat (NaB4O7 10 H2O). Boraks atau asam boraks biasanya digunakan untuk bahan pembuat deterjen dan antiseptik dan penggunaannya dalam produk-produk pangan, dapat menyebabkan berbagai gangguan pada kesehatan. Tujuan penelitian ini adalah untuk mengetahui keberadaan dan kadar Boraks yang terdapat pada abu kopra di Desa Tateli dan Desa Lelema. Metode yang digunakan pada penelitian ini adalah metode Uji Warna pada Nyala Api, Kertas Tumerik dan Spektrofotometer UV-Vis. Hasil penelitian yang diperoleh bahwah hasil analisis secara kualitatif dengan Uji warna pada Nyala Api dan Kertas Tumerik diperoleh kedua sampel teridentifikasi berdasarkan parameter visualisasi warna. Analisis kuantitatif spektrofotometer UV-Vis menghasilkan nilai kadar Boraks tiap sampel masing-masing yang dihitung dengan menggunakan rumus regresi y = 0,137x + 0,136 dan nilai R2 = 0,999. sampel A sebesar 1,131 μg/mL dan B sebesar 0,277 μg/mL.
