Preventive actions in postharvest procedures are essential in maintaining good quality of malting barley and assuring safety along the barley to beer chain. The effects of temperature and moisture content on grain viability and fungal activity were studied in farm-scale experimental silos during long term storage in 2000 and 2001. Ambient temperature affected the storage conditions. Moisture content of 15% combined with elevated storage temperature led to the rapid grain deterioration. In the Finnish climate, barley is always dried immediately after harvesting. Improper drying and uncontrolled storage of barley may cause irreversible quality changes, and promote production of harmful microbial metabolites
