La réaction, fortement exothermique, consiste à convertir les doubles liaisons C=C des acides gras « insaturés », en présence d’hydrogène et d’un catalyseur solide. L’hydrogénation des graisses polyinsaturées doit être favorisée, tout en réduisant l’isomérisation en acides gras dits trans.
