La paroi cellulaire est un compartiment extracellulaire propre au règne végétal. Majoritairement composée de polysaccharides, elle a une influence majeure sur la qualité nutritionnelle et les propriétés technologiques du grain de céréale. Sa composition et la structure chimique de ses constituants ainsi que leur arrangement au sein de la paroi évoluent tout au long du développement du grain ou en réponse aux facteurs biotiques ou abiotiques.
