Biološke opasnosti u lancu proizvodnje mesa specifične su za pojedine životinjske vrste. Sukladno promjenama u načinu uzgoja, preventivnim mjerama, sustavima nadzora i mjerama suzbijanja određene su bolesti životinja (zoonoze) danas gotovo beznačajne za sigurnost mesa. S druge strane, neke bakterijske i parazitarne bolesti se postojećim sustavima kontrole u klaonicama/farmama ne detektiraju na zadovoljavajućoj razini i time mogu predstavljati rizik za potrošače.
