The impact of Aloe vera juice on formation of gel and emulsion systems

Aim of the research: to evaluate how Aloe vera juice impacts the formulation of gel and emulsion systems and examine how it affects their quality. The objectives of research: to evaluate an impact of Aloe vera juice on pH and dynamic viscosity of the system. To asses how Aloe vera juice impacts the textural properties of emulsions and gels. To determine how Aloe vera juice affects physical stability of the systems. To asses the influence of Aloe vera juice on emulsion droplet length. The object of research: gels and emulsions made with varying quantities of Aloe vera juice. Research methods: evaluation of kinetic stability by conducting a centrifugation and freeze–thaw tests, evaluation of: dynamic viscosity, pH value, texture analysis, assessment of the emulsions microstructure to determine droplet length. Results and conclusions: the use of Aloe vera juice results in lower pH values of system. After 28 days the change in dynamic viscosity was greater in systems containing no Aloe vera juice, but it’s influence on viscosity was not found. By assessing the results of texture analysis, it was found that when concentration of Aloe vera juice in the system was higher the values of hardness, cohesion, index of viscosity and consistency were lower, also higher quantities of Aloe vera juice in hydrophilic phase resulted in lesser variation of these measures during time. Spreadability test results show that lower values of firmness were achieved when the quantity of Aloe vera juice in the system was greater. Impact of Aloe vera juice on work of shear was not noticed. During kinetic testing all gels remained stable, but the stability of emulsions was distorted when concentrations of Aloe vera juice were higher. During evaluation of microstructure influence of Aloe vera juice on droplet length was not found, but sample E2 presented the most favorable qualities. Practical recommendations: assess pH of water before compounding or measuring pH in order to avoid inconsistency of results. When using EmulsiGel Eco® mix powder with glycerol until white, then leave it to swell in order to make the compounding process easyer and to ensure better homogeneity of the system.
